It really depends what models, but it's usually better to keep any collectible in it's original packaging. Hope this helps!

I sugest you leave them in the display case for protection against dust.
Mint In Box this is a common phrase in collecting as you know. Keeping the model in the box usually will help maintain a better resale value and also protect the model. But, I know many collectors who remove thier models for displaying and keep the box in storage. Then there is that group of collectors, whatever they collect, that like to get close to the latest addition to thier colection. They want to take it from the box, examine the new model and display it in an eye catching manner for everyone to enjoy. I am in that group. I plan to keep my many collections until I die or decide to give them to someone who would apperciate and enjoy. Or, maybe just let the kids have to deal with it on my departure.
